Raw Beet And Herb Salad

Ingredients

¼cup sliced almonds
2 tbsp sesame seeds
1/3 cup pumpkin seeds
3 medium raw beet, peeled and julienned
1 1/3 cups basil leaves, torn
2/3 cups parsley leaves, picked
2 cups dill
1 ¼ cup cilantro
11/2 cup tarragon leaves
1 tsp dried chile flakes
2 tsp grated lemon zest
3 tbsp lemon juice
5 tbsp olive oil
Salt and black pepper

Directions

Heat the oven to 400F.Scatter the almonds, sesame seeds and pumpkin seeds on an ovenproof tray and bake for six minutes. Remove and leave to cool. In a large bowl, put the beets,herbs, chile and lemon zest. Add the seeds, nuts, lemon juice, oil, a quarter-teaspoon of salt and a grind of black pepper. Toss and serve at once.
