3 large unpeeled sweet potatoes
2 Tablespoons olive oil (or enough to coat)
1 teaspoon curry powder
1/2 teaspoon sea salt
1/2 teaspoon ground cumin
1/4 teaspoon ground cloves
1/4 teaspoon ground black pepper
Preheat oven to 450 degrees.
Cut sweet potatoes in half crosswise. Cut each half into 6 wedges.
Combine sweet potatoes and remaining ingredients in container with lid and shake to coat.
Place potatoes on baking sheet (Try not to overlap).
Bake 30 minutes, turning every 10 minutes until tender on the inside and crisp and slightly browned on the outside.
