Spice rub:
1T pure mild chile powder, preferably ancho
2 t ground cumin
1t ground coriander
1/2 t salt
4 6 oz skinless, boneless chicken breasts pounded 1/3 inch thick
10 oz baby spinach
1 pint grape tomatoes, halved
4 scallions, thinly sliced1
Hass avocado, halved, pitted, peeled, and cut into thin wedges6 radishes, thinly sliced
Dressing:
6 oz plain yogurt, not greek style
1 T`extra virgin olive oil
1 T fresh lemon juice
1 garlic clove, minced
salt and pepper to taste
