Chicken and White Bean Chili

Ingredients

¼ cup olive oil

2 onions-chopped

2 red bell pepper-chopped

2-3 jalapeno peppers seeded and chopped (optional)

6-8 garlic cloves-chopped (or 3T minced from jar)

2 T chili powder

1 6 oz can tomato paste

1T ground cumin

1T dried oregano

2 15-16 oz cans white beans and juices

2 15oz. cans diced tomatoes in juice (preferably fire-roasted)

1 Rotisserie chicken - Meat removed from bones, shredded

1/2 cup cilantro-chopped

1 lb baby spinach or arugula

1 ½ t salt

1 t coarsely ground pepper

Toppings:

Shredded cheese of choice 

Sour cream

Sliced green onions


Directions

Sauté on medium-high onion, peppers, garlic in olive oil-5 minutes

Add next 6 ingredients-simmer 20 minutes

Add shredded Chicken-simmer until warmed through

Add water if necessary

Mix in cilantro, spinach until wilted

Season with salt and pepper Serve with toppings if desired: shredded cheese, sour cream, thinly sliced green onion
