Frittata With Potato and Onion

Ingredients

10 large eggs

1/2 cup heavy cream or 1/2/ and 1/2

3 tablespoons butter

Salt and pepper

Veggies (This is a way to use up whatever vegetable you have on hand.  You can use spinach, tomatoes, mushrooms, asparagus, pepper, potato, onion, zucchini etc).

Meat (optional- cooked sausage, ham etc.)   

Cheese (Various types of cheese can be used: feta, asiago, goat etc)                                                                                                                                                                                                                                                                                                                                                                                                   

This recipe:

1/2 lb. red potatoes (boiled for 20 min, cooled, cut into 1/4"slices)

 2 medium onions halved and thinly sliced

1 yellow bell pepper, thinly sliced

1 orange bell pepper, thinly sliced

3 tablespoons parsley, chopped

3 oz grated sharp cheddar cheese 


Directions

Pre-heat oven to 350 degrees.

Grease 13x9x2 baking pan.

Combine eggs, cream, salt and pepper and whisk.

In a large skillet add 1 tablespoon butter cook onions about 10 min. -stirring occasionally over med. heat  Remove from pan, reserve.

Add 1 tablespoon butter cook pepper about 5 min. -stirring occasionally over med. heat  Remove from pan, reserve.

Add 1 tablespoon butter cook potato about 2 min per side until browned over med. heat  Remove from pan, reserve.

Add veggies to prepared pan and distribute evenly.

Combine egg mixture with parsley and add to pan.

Sprinkle with cheese. Bake uncovered about 35 min.

Cool slightly before serving
