10 large eggs
1/2 cup heavy cream or 1/2/ and 1/2
3 tablespoons butter
Salt and pepper
Veggies (This is a way to use up whatever vegetable you have on hand. You can use spinach, tomatoes, mushrooms, asparagus, pepper, potato, onion, zucchini etc).
Meat (optional- cooked sausage, ham etc.)
Cheese (Various types of cheese can be used: feta, asiago, goat etc)
This recipe:
10 oz. fresh baby spinach
2 medium onions halved and thinly sliced
1 pound mushrooms (any kind), thinly sliced
1/2 -1 lb Italian sausage
3 tablespoons parsley, chopped
3 oz crumbled fete cheese
Pre-heat oven to 350 degrees.
Grease 13x9x2 baking pan.
Combine eggs, cream, salt and pepper and parsley and whisk.
In a large skillet crumble sausage and cook 10 minutes, remove, drain on paper towel, reserve.
Add 1 tablespoon butter cook onions about 10 min. -stirring occasionally over med. heat Remove from pan, reserve.
Add 1 tablespoon butter cook mushrooms about 5 min. -stirring occasionally over med. heat Remove from pan, reserve.
Add 1 tablespoon butter cook spinach until wilted.
Add other ingredients to prepared baking pan and distribute evenly.
Combine egg mixture with parsley and add to pan.
Sprinkle with cheese. Bake uncovered about 35 min.
Cool slightly before serving
