Pata with Shrimp, tomatoes, olive, caper, and basil

Ingredients

1/2 -1 lb       Large shrimp (Peeled, deveined, tails removed

3-4 T            olive oil

salt and pepper

8oz               Dried pasta (Angel hair, spaghetti or linguini)-cooked to package directions

SAUCE

2-3               large shallots, chopped

1/4 t             dried, crushed red pepper

7-10             plum tomatoes- Seeded, chopped

2/3c             Kalamata olives-pitted, chopped

1 cup           fresh basil-chopped (Reserve some for garnish)

2T                capers-drained

1/2 cup        clam juice

1/2 cup        white wine

TOPPING

feta cheese-crumbled

Directions

Heat 3 T oil, add shallots, crushed red pepper- cook 1-2 minutes.

Add remaining sauce ingredients .  Boil until sauce thickens 7-8 min.

Cook Pasta and shrimp:

Shrimp-combine 1-2 T oil, salt and pepper. Toss with shrimp to coat.  Cook shrimp on baking dish 400 degrees for 8 min.

Pasta-prepare to package directions

Serve Cooked pasta with sauce, top with shrimp and crumbled feta.

Garnish with basil.
