Dressing
1/3 cup rice vinegar
3T packed brown sugar
1/2 cup creamy peanut butter (non GMO or organic)
3 tablespoons soy sauce
2T fresh ginger-peeled and minced
1 1/2 T minced garlic
salt and pepper to taste
Slaw
5 cups thinly sliced green cabbage or 1 bag slaw mix
2 large red and/or yellow bell peppers cut into matchstick sized strips
2 medium carrots-peeled, cut into matchstick sized strips
8 large scallions cut into matchstick sized strips
1/2 cup chopped fresh cilantro
2 cups shredded rotisserie (optional)
Combine dressing ingredients and wisk together.
Combine slaw ingredients in large container leaving room for tossing.
Add dressing and toss to coat.
Adjust seasoning to taste.
Serve chilled.
